Matzah Toffee

I’m back.

Life is busy.

Writing is hard.

I saw Civil War with Daniel and Dad.

Let’s have some toffee.

Matzah Toffee

4-6 sheets matzah (enough to cover your cookie sheet)

1 cup (2 sticks) butter

1 cup packed light brown sugar

A big pinch of sea salt

1/2 tsp. pure vanilla extract

1 1/2 cups semisweet or bittersweet chocolate chips

1 cup toasted chopped almonds or coconut (optional)

Extra sea salt for sprinkling (optional)

  1. Line a cookie sheet completely with foil or parchment paper. Cover the bottom with crunched up matzah in a fairly thick layer.

2. In a medium saucepan, melt the butter and brown sugar together and stir over medium heat until it begins to boil. Once it has begun to boil, let it bubble for three more minutes, stirring it well. Remove from heat and add the salt and vanilla. Then quickly pour it over the matzah

3. Bake the matzah for 15 minutes at 350*F, watching that the corners don’t darken too quickly and burn. You can reduce the heat if needed.

4. Remove from the oven and cover immediately with chocolate chips. Let stand for 5 or more minutes until the chocolate chips are melty, then spread evenly across the top of the matzah.

5. Sprinkle on the nuts and/or salt, if you want.

6.Β Let cool for a little longer (until you can hold the pan without burning yourself) and put in the fridge or freezer to cool the rest of the way.

7. Cut or break into pieces and serve!

(Those are sprinkles on top. Courtesy of guess who? πŸ˜‰ )

Well, you guys should be able to get leftover matzah from somebody at this time of year.

Tell me how it turns out! πŸ˜€

Okay, so the matzah toffee recipe jumped up the queue a little since I’m not done with my fanfic or book review, but I promise they’re coming soon.

Also a not-spoiler-y Civil War review… would you guys want that?

Anyway, *waves* bye for now! Enjoy the toffee and please comment!

  1. Mmm, looks good!

So … Civil War. How’d you like it? We got to see it on Fri., so that was pretty cool. My sister kept squealing. As did – I think – my brother. πŸ˜‰

    1. πŸ™‚
It was… intense. Good, but intense. πŸ˜› Still on Team Cap, though Stark was by no means a bad dude. The airport scene was probably my favorite. (Though I really do wish they did more with Ant-Man and Spiderman. Both of them were awesome.)
Very well written… but yeah. No spoilers for you, young lady. *shakes finger*

  2. Ooh! That toffee looks so good! 😍 Also — how was Civil War?!?!?! One of my teachers said it was (and I quote) “Meh. Just meh.” I really want to see it, although it breaks my heart to see my little Avengers fighting amongst each other 😦

      1. Haha ok I’m glad to hear that!! I know, I was surprised when my teacher said that too because all the trailers looked so good and the plot looked like it’d be great too!

  3. Oh Civil War… I fangirled so hard when I saw the first trailer I spilled hot oatmeal in my lap… As long as there are no major spoilers I would LOVE a review. (I wait until I can see movies in my home and dictate how many times we need to stop the movie so I can rush in another room for something or fangirl as hard as I want to without getting glares)

    1. I know, I don’t plan on giving any. BUT YES SO GOOD, ERIN. Prepare your feels to die a slow and painful death throughout the course of the movie. I’m still nursing mine back to health.
But Hawkeye. You’ll love him. XD
Okay, I should really just go write the review.

      1. *crying* I’m really worried now…. the fallout in the comics was… I found out about the event in the comics while trying to find out more about what “The Winter Soldier” was like in the comics. I’m very concerned…

        1. *hug* *doesn’t trust myself to say much without spoilers* I’ve got a review coming out tomorrow. AND EMAIL ME WHEN YOU SEE THE MOVIE I’VE GOT SO MUCH SPOILERY RANTING TO DO.

          1. πŸ˜€
Okay, just curious. Have you ever done One Year Adventure Novel? I doubt it, but… just checking. ‘cuz when I’m heading down your way, it’s for an OYAN conference in Olathe.

  4. First of all, that toffee looks A.M.A.Z.I.N.G. I want some right now!
Second of all, YOU SAW CIVIL WAR? I WANT TO SEE IT SO BADLY, AND I HAVEN’T YET! *calms down and stops typing in caps* Was it good? πŸ˜›

Any thoughts?
