An eggplant sandwich for eggplant haters

My mom made this recipe up today. It… is AWESOME! Okay, I seriously don’t like eggplant, but I loved this. My three year old brother was whining that it looked gross before mom gave him a bite, the next words out of his mouth were: “Where’s mine?”

Go to the store right now, get an eggplant, come back and make this.

Eggplant Sandwich

Ingredients:

1 eggplant

A package of Boursin© spread

Spinach

Mozzarella cheese

A few thin onion slices

Roast turkey

Utensils:

Cast iron skillet or griddle

Spatula

Vegetable peeler

Peel the eggplant and slice into quarter inch discs. Select two even ones and put them on a plate. Lightly salt and pepper both sides. Get out the Boursin and spread a thin layer on one of the slices. Put the turkey, spinach, onion and mozzarella on in whatever order you want, as long as it doesn’t fall apart, then place the second eggplant slice on top of it all. If you don’t have better quality mozzarella, string cheese strips work just fine. Drizzle some olive oil on your pan or griddle and let it heat for a little bit. Carefully place the eggplant sandwich on the pan/griddle. Wait until that side is well browned, then flip, supporting the top as you do. wait until that side is browned, scoop onto a plate and eat with a fork (it falls apart if you use your fingers, but if you want to be brave, go ahead).
